Florida Sunshine Cookie
- 12 Tbsp unsalted butter, melted (1¾ sticks)12 Tbsp unsalted butter, melted (1¾ sticks)

- ½ tsp lemon extract½ tsp lemon extract
- ½ tsp orange extract½ tsp orange extract
- ½ tsp Pure Vanilla Extract½ tsp Pure Vanilla Extract
- zest of one lemonzest of one lemon
- zest of one orangezest of one orange
- zest of one limezest of one lime
- ½ tsp baking soda½ tsp baking soda
- ½ tsp cream of tartar½ tsp cream of tartar
- ½ tsp Florida Sunshine Spice Blend, ground fine½ tsp Florida Sunshine Spice Blend, ground fine
- 2 1/8 cups all-purpose flour (or 300g pre-sifted)2 ⅛ cups all-purpose flour (or 300g pre-sifted)
- 1.5 oz Florida Sunshine Sugar, for rolling

- Stir melted butter and sugars until butter is absorbed; stir in egg.
- Stir in extracts, zests, baking soda, cream of tartar, and spice blend; fold in flour until just incorporated. Cover and refrigerate for two hours or overnight.
- Preheat oven to 350ºF. Add Florida Sunshine Sugar to a small bowl. Line a baking sheet with parchment paper and set aside.
- Scoop a walnut-sized portion of cookie dough and roll it between palms to form a smooth ball. Roll in Florida Sunshine Sugar to coat and place on the baking sheet. Repeat with remaining dough; position balls two inches apart. Bake 10 to 12 minutes.

"Yummy" isn't sufficient for how good these cookies look. Nice shots, too, especially the first one.

ReplyDeleteIt took me several tries because my timing was off....I'd be half done sprinkling before the shutter would go off but I eventually got it. Thank goodness for DSL.....the amount of money being wasted had it been a film camera.
